What's Cooking, Mama?

I'm feeling uninspired in the kitchen department. Whatcha cooking for dinner this week?

I wish I had some good ideas, but I need help here, too! I always make a meal in the slow cooker on Tuesdays because it's my long day- I am interning in the elementary school from 8:30-3:30, pick up S at 4, then have to be in class (40 min away) at 6:30. So, I'm also waiting for some suggestions! :)

I had yummy fresh green beans drizzled with olive oil and salt cooked real hot in the oven and beans and rice and an apple.

I've been getting a lot of inspiration recently from this food journal: http://www.101cookbooks.com/index.html as well as this one: http://blog.fatfreevegan.com/ This recipe is amazing: http://blog.fatfreevegan.com/2008/09/roasted-vegetables-with-tomato.html I made a big pot of tortilla soup similar to the one that is posted in that first site, I added beans & green chiles though.

I spend my weekends making dinners and freezing them. With three kids and full time school and work i would lose my mind if I had to cook every night. The vacum sealer thing on tv is amazing and very helpful.

i made chicken stir fry last night... all it is is cubed up chicken breast, red and green bell peppers, a medium sized onion cut in half and sliced into thin strips, and the peppers done the same way, about a tsp of chili powder and garlic powder, salt and pepper, and some white rice to go on the side... you can also do the same recipe for beef stir fry too... its really super good and C loves it even tho she's just 19months old lol also i've got some other really good recipes i've wrote down i'll go through them and see what i can find if yall would like some more of them... proud mama as of june 2nd 2007
